  • 1/3 cup iceberg lettuce, shredded
  • 3 cherry tomatoes, halved
  • ¼ medium capsicum, seeded and diced
  • ¼ medium Lebanese cucumber, chopped
  • 1 slice red onion, chopped
  • ¼ avocado, chopped
  • ¼ cup no-added-salt canned corn, drained
  • ½ cup canned kidney beans , drained and rinsed
  • 1 lemon or lime wedges
  1. Mix together all ingredients except the lime.
  2. Squeeze lime over salad just before serving.

Alternatives

  • Substitute kidney beans with rinsed and drained chickpeas or cannelloni beans.
  • Add chicken for a non-vegetarian option.
  • Serve with wholegrain bread if desired.

Storage Suggestions

  • Serve immediately.
