Caramalized Pineapple
  • 1/2 small-medium pineapple (440g can pineapple pieces in natural juice, drained)
  • 2 tablespoons brown sugar
  • 250g ricotta cheese
  • 1/4 cup hazelnuts, ground
  • 1 tablespoon honey
  • 1/4 teaspoon of cinnamon
  1. Peel pineapple and cut into 1cm thick cubes
  2. Place pineapple and brown sugar in bowl and toss to coat
  3. Place pineapple on tray and under a medium-high grill for 1-2 minutes, until caramelised, using tongs to turn
  4. Combine ricotta cheese, hazelnuts, honey and cinnamon in a bowl, mix well
  5. Serve pineapple with dollop of the flavoured ricotta

Alternatives

Cutting chunkier pieces of pineapple and grilling on the BBQ

Replace pineapple with peaches or nectarines or watermelon

Storage Suggestions

Flavoured ricotta may be made ahead of time and stored in the refrigerator for up to 7 days.
