Egg, rocket and avocado toast topper

Ingredients
- 1 regular slice wholegrain bread, toasted
- 1 tablespoon avocado, mashed
- 1 handful of rocket or baby spinach
- ½ medium tomato, sliced
- 1 boiled egg, peeled and sliced
- drizzle of Tabasco sauce, optional
- freshly ground or cracked black pepper, to taste
Method
- Spread avocado on toast.
- Top with rocket leaves, sliced tomato and egg slices.
- Add a sprinkle of Tabasco sauce, if desired, and pepper to taste.

- Serve immediately.
