  • 1 regular slice wholegrain bread, toasted
  • 1 tablespoon avocado, mashed
  • 1 handful of rocket or baby spinach
  • ½ medium tomato, sliced
  • 1 boiled egg, peeled and sliced
  • drizzle of Tabasco sauce, optional
  • freshly ground or cracked black pepper, to taste
  1. Spread avocado on toast.
  2. Top with rocket leaves, sliced tomato and egg slices.
  3. Add a sprinkle of Tabasco sauce, if desired, and pepper to taste.

Storage Suggestions

  • Serve immediately.
