Fruit Platter with Yoghurt
  • 2 medium red apples, cored, cut into wedges
  • 2 medium oranges, peeled and sliced
  • 2 medium peaches, sliced
  • 1 punnet strawberries, washed and stalks removed
  • 1 cup reduced-fat yoghurt
  • 1 cup untoasted muesli
  1. Arrange fruit on plates.
  2. Mix muesli with yoghurt and place on top of fruit.
  3. Serve immediately.

Process

Step 1

Pit stone fruit and slice.

Step 2

Place sliced apples in lemon water to stop them from turning brown.

Step 3

Cut skin off orange and cut into slices.

Step 4

Slice watermelon and use cookie cutters to cut shapes.

Step 5

Mix muesli with yoghurt and place on top of fruit.

Alternatives

  • Use any combination of seasonal fruits such as mandarins, apricots, rockmelon, watermelon, passionfruit, blueberries, honeydew, pear, banana or canned fruit in natural juice.
  • Replace muesli with pulp of 2 passionfruit or 2 tablespoon mixed nuts.

Storage Suggestions

Can be stored in the refrigerator for up to 3 days.
