Ingredients
3 rounds of ham, cheese, roma tomato sandwiches
- 60g ham
- 60g cheese, sliced for 3 sandwiches
- 2 roma tomatoes, sliced (reserving a small slice of the flesh for the snake’s tongue)
- 3 slices wholemeal bread
- 3 slices multigrain bread
3 rounds of cream cheese and cucumber sandwiches
- 3 tablespoons low-fat cream cheese
- 2 Lebanese cucumbers, sliced (reserving a 10cm end for the snake’s head)
- 3 slices white bread
- 3 slices multigrain bread
3 rounds of chicken, mayonnaise/sour cream lettuce carrot sandwiches
- ½ cooked chicken breast
- 1 baby cos lettuce, washed and leaves separated (2-3 leaves per sandwich, depending on size of lettuce)
- ½ carrot, grated
- 1/8 cup low-fat mayonnaise
- 1/8 cup low-fat sour cream (mixed together with mayonnaise)
- 3 slices wholemeal bread
- 3 slices white bread
Snake’s head
- 10cm end of cucumber for head
- 1 small slice of tomato flesh (for snake’s tongue)*
- 2 sultanas for eyes, and just enough cream cheese to fix the eyes to the head
*alternatively, a small slice of capsicum can be used if using for another recipe.
Garnish (optional)
- 1 cherry tomato
Method
- Make sandwiches
- Ham, cheese and roma tomato sandwiches
- Lay out 3 slices of wholemeal bread on a board.
- Layer ham, tomato and cheese on each piece of bread.
- Cover with slices of multigrain bread.
- Cream cheese and cucumber sandwiches
- Lay out 3 slices of white bread on a board.
- Spread 1 tablespoon of cream cheese across each piece of bread.
- Spread sliced cucumber across each.
- Cover with slice of multigrain bread.
- Chicken, mayonnaise, sour cream, lettuce and carrot sandwiches
- Mix together the mayonnaise and sour cream.
- Layout 3 slices of wholemeal bread.
- Spread mayonnaise and sour cream.
- Spread cooked chicken across each slice of bread.
- Spread carrot across each.
- Layer enough lettuce to cover the sandwich.
- Cover with slice of white bread.
- Ham, cheese and roma tomato sandwiches
- Use a round cookie cutter small enough to allow 4 rounds to be cut from each sandwich, with the minimum of waste possible.
- Place end of cucumber on plate for head, add a dot of cream cheese for each eye and place a sultana in each dot. Place tomato (tongue) at the front.
- Carefully stand a round from each of the sandwiches on its side and repeat the order until all the rounds are used.
- Garnish with a cherry tomato in the middle.
- Cover and keep chilled in the fridge until ready to serve.
